The texture is just like rice noodles, they're soft with a *tiiiiny* al dente chew, and since they have no taste they are pretty universal. I'm looking forward to trying a peanut stir fry next. There's not a lot to say about the nutritional value, since there really isn't much. But if you're looking for a low calorie/low carb alternative to pasta/noodles this is pretty awesome so far.
